This has a good, rich curry flavor, and it’s great with Cranberry Chutney.

2 pounds ground turkey

1 medium onion, chopped fairy fine

1/4 cup egg beaters

2 cloves garlic, crushed

1 to 2 tablespoons curry powder

1 tablespoon salt

1 teaspoon pepper

  1. Preheat the oven to 350 degrees
  2. Combine all the ingredients in a big bowl and squeeze together until it’s very well combined.
  3. Spray a loaf pan with nonstick cooking spray, and pack the turkey mixture into the pan. Bake for 60 to 75 minutes.

Yield: 6 servings, each with 4 grams of carbohydrates and 1 gram or fiber, for a total of 3 grams of usable carbs and 29 grams of protein.
